Course Description: This course employs a variety of delivery tools including in-class lecture, case analysis, problems, and invited expert seminars to explore the subject. It includes modules on science, health, economics, politics & law, social issues relating to food and food security. The primary aim is to engage students in broad range of issues associated with food and food future. In this course the students would become familiar with the key literature in the area, and the roles of key food regulatory organizations. The topics covered include: 1) Designer foods such as probiotics and functional foods, 2) global food security and famine, 3) food production systems & multi food supply chain, 4) economics of food, 5) adverse reactions to food, food and the immune system, food allergy & food safety, 6) organic foods, genetic modification, and GM food labeling, 7) food laws and politics of food, 8) health issues – the obesity epidemic, salts, fats and sugars. At the completion of this subject, students are able to: 1) Analyze the nutritional benefits of a range of foods, 2) incorporate consideration of global food politics, security and sustainability in applying expertise in other knowledge domains, 3) and critically evaluate use of biotechnology in production, safety and quality of food for a healthy planet.
