Course Description: This is an introductory course in nutrition and health. The course objectives are to understand and apply the basic science of human nutrition: anatomy, physiology, biochemistry, and metabolism; to critique the modern nutrition environment, with a focus on evidence-based aspects of: public health; policy; health promotion; food marketing; social and environmental influences; eating disorders and nutrition-related disease aetiology; prevention and treatment; and to be able to analyze one's own dietary behaviors. The assessments include graded online readings, a project on your own nutrition behaviors, a group presentation, and a blog post.
